Happy St Patty's Day! oder die Selbstmord Muffins

Happy St. Patricks Day nachträglich!

Eine gute Freundin hat ihren Geburtstag im Pub nachgefeiert und so wurde der Teigschaber geschwungen und Russische Zupfmuffins UND zwei kleine St Patty Glücksmuffins gebacken. 

Leider hat sich einer auf der Treppe in den Tod gestürzt! So konnte nur einer Verschenkt und verputzt werden. 
Die restlichen Kuhflecken Muffins sollten eigentlich ein Mitbringsel für die lieben Menschen im neuen Stall sein... eigentlich! Mal kurz nicht aufgepasst, wurden sie samt Papiermanschette vom Stallhund verspeist! Geschmeckt haben sie also! Nun lebt nur noch einer! (Und das sicher auch nicht mehr lange)

Das Rezept gibts hier auf Chefkoch! Die Teigmenge kann für Muffins ruhig noch etwas aufgestockt werden. Sonst bleibt ganz viel Creme übrig!

Lemon and poppy seed cake

Heute gibt es etwas aus meinem Lieblingsbackbuch von der Hummingbird Bakery:
Lemon and Poppy Seed Loaf mit Lemon Syrup! Nom nom nom!
Da es in der Woche ein großes Glas Mohn Marzipan Joghurt gab, musste der schnellstmöglich in etwas leckeres, kuchiges umgewandelt werden und tadaa:




Das Rezept gibts morgen Abend, ich werd mir jetzt erstmal eine neue Tasse KiBa Tee gönnen und vielleicht noch ein kleines Stück Kuchen essen!


Nachtrag: und nun gibt es das Rezept!


Lemon Poppy Seed Loaf aus Cake days der Hummingbird Bakery:


190 g unsalted softened butter
190 g plain flour
190 g caster sugar
3 large eggs
1tsp baking powder
1/4 tsp salt
4 tbsp poppy seeds
2 tbsp lemon zest
25ml whole milk
80 g ricotta cheese


(Ich habe den Ricotta durch 80g Mohn Marzipan Joghurt, den wir gerade da hatten) und noch ein Päckchen Abgeriebene Zitronenschale von Dr. Oet. in den Teig gegeben (zusätzlich zur frischen Schale)


For the syrup
Juice of 1 lemon
50g caster sugar
100ml water


♥  Preheat the oven to 200°C and grease your loaf tin with butter and flour


♥  Cream together the butter and the sugar. Add the eggs, one at a time. Mixing well after each addition

♥  In a separate bowl, sift together the flour, baking powder and salt, then mix in the poppy seeds and lemon zest.Add this dry mixture in three batches to the wet ingredients. After the second batch add the milk and beat everything at medium speed until its really creamy and smooth.Than add the yoghurt (ricotta).

♥  Pour the batter in the loaf tin and bake for about 50-60 
minutes or until it bounces back when lightly pressed and
no uncooked batter is sticking on the skewer, when inserted.

♥  While the cake is baking, put the lemon juice, sugar and water in a small saucepan and bring to the boil, allowing the syrup to reduce by about half. 

♥  When the cake is cooked, pour the syrup over it while it is still hot, allowing to soak into the sponge. Leave to cool before turning it upside down. And then enjoy it!

Allein schon der Name Poppy Seeds ist so niedlich, dass man Mohnkuchen lieben muss! Viel Spaß beim nachbacken!
